paneer-methi paratha

Ingredients
For dough
Methi leaves-cleaned and chopped-1 bunch
wheat flour-3 cups
curd-4 tablespoons
oil-1tsp
turmeric powder-1/2 tsp
salt to taste
sugar-1 tsp
ginger-garlic-green chilli paste-1 tablespoon
jeera-1 tsp
For filling
Paneer crumbled-1 cup
onion-1 small- very finely chopped
coriander leaves-finely chopped-1 tsp
green chiili-finely cut-1
Ghee or table butter or oil for cooking
Flour for dusting and sprinkling on the filling.

Method
Mix all ingredients of dough adding water only if required.
Knead well to get a semi-soft dough.wrap in wet muslin cloth and leave aside for half an hour.
Mix ingredients for filling just before cooking so that it does not get soggy.
Roll out the dough into a small circle using flour for dusting.
Place 1 tablespoon of filling in the centre.
Sprinkle flour on it to reduce any moisture.
Fold the roti.
Seal the ends.
Flatten gently and roll out again using flour for dusting.
Cook on hot Tawa on both sides using ghee,butter or oil till brown specs appear.
Serve hot with mint and coriander chutney
