Smoked mussel and spaghetti bake

Ingredients
Butter to grease dish
200g spaghetti
4 spring onions, chopped
1 large tomato, cut into 1cm dice
1/2 cup grated tasty cheese
200g smoked mussels, halved
6 eggs, lightly beaten
1/2 cup milk
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper

Methods
1. Heat oven to 180°C. Butter a ceramic baking dish. Cook the spaghetti in plenty of boiling, salted water for 10 minutes or until just tender to the bite. Rinse under cold water, then drain well.

2. Arrange spaghetti in baking dish and sprinkle with spring onion, diced tomato, grated cheese and mussels.

3. Combine beaten eggs, milk and parsley in a bowl and season with salt and pepper. Whisk to combine and pour over theingredients in the baking dish.

4. Bake for 35 to 40 minutes or until golden brown and set. Slice to serve hot or warm.

Tip: Pasta should be cooked in plenty of boiling water (use a large saucepan) so it doesn’t stick together during cooking. The water needs to be well-salted before adding the pasta – salt helps to flavour the pasta, which would otherwise be bland.
