Pasta with turkey, peas and beans

Ingredients
Serves 4

300g pasta shapes, such as penne, bows or spirals
1 clove garlic, crushed
2 tbsp extra-virgin olive oil
Salt and freshly ground black pepper
1 cup frozen peas
300g green beans, trimmed and sliced
100g snow peas, trimmed and halved lengthways
1½ cups shredded cooked turkey (or chicken)
Shaved fresh parmesan, to serve
¼ cup torn fresh basil leaves, to serve


Methods
1. Cook pasta in plenty of boiling, salted water for 8 to 10 minutes or according to packet instructions until just tender to the bite. Drain well and toss with garlic and olive oil, then season with salt and pepper.

2. At the same time, cook peas and beans in boiling, salted water for 2 minutes, add snow peas at the last minute to cook for just 30 seconds.

3. Drain well and toss with hot pasta and turkey. Serve in hot pasta bowls, scattered with parmesan and basil.
