Summer Tomato Pasta

Ingredients
* 1 pound very ripe tomatoes -- chopped
* 6 large cloves garlic -- minced
* 1/4 cup fresh basil -- chopped
* 2 tablespoons extra virgin olive oil
* salt & freshly ground pepper to taste
* pinch red pepper flakes
* 12 ounces linguine or cappelletti

Method of Prep
Place tomatoes in a large bowl and add the remaining ingredients except pasta. Mix well and set aside for about 3 hours at room temperature.
  • Cook pasta per package directions.
  • Drain and add to tomato mixture.
  • Toss well and serve immediately.
