Ingredients
  • 440g grated pumpkin
  • 16fl oz milk (I like to use coconut milk)
  • 5 cardamom pods, emptiede and ground
  • 2 tbsp vegetable oil
  • 4 to 6 tbsp granulated sugar to taste
  • 1 tbsp raisins
  • 1 tbsp chopped almonds



Directions
Combine grated pumpkin, milk and cardamom in a heavy based pan.
Bring to the boil and simmer , stirring occasionally until almost all of the milk has evaporated. This make take an hour or so.
Stir more frequently now until you cannot see any liquid.
Add oil and sugar and cook for approx 10 to 20 minutes until the mixture resembles mashed potatoes.
Add sultanas and nuts and stir for another minute.
Allow to cool.
This makes approx 8 servings and I either serve this with sweet biscuits at the end of a meal, or use it as a filling for Persian Pumkin Baklava.
