    Smile Traditional Roast Beef

    Hi, guys

    This is a great recipe for dinner.
    Delicious Traditional Roast Beef, especially for a Sunday dinner.

    Ingredients

    * 2 kg beef sirloin
    * 4 tsp wholegrain mustard
    * 2 tsp olive oil
    * salt
    * fresh black pepper
    * A bunch of chopped fresh rosemary

    Instructions

    Step 1
    Preheat the oven to 245ºC or gas mark 9.

    Step 2
    Get rid of any fat or sinew. Let the beef reach room temperature for about two hours prior to cooking.
    Mix the mustard, olive oil, and herbs in a bowl. Smear it all over the surface of the meat until evenly covered.
    Season the beef with salt and ground black pepper.

    Step 3
    Put the roasting tin in the center of the oven and leave it for 15 minutes. The meat is above the tray, so the juices collect in the tray underneath.

    Step 4
    For a rare roast, set the temperature to around 54ºC after 15 mins.
    For medium rare, set the temperature around 60ºC after 20 mins.
    For medium , set the temperature around 65ºC after 30 mins.
    For well done, 40 mins and 75ºC.

    Step 5
    Remove the beef, leave it for 15 minutes on the rack at room temperature. This allows the juices to seep back into the meat and be succulent.
